The Lexington House
During the spring and summer, The Lex offers a seasonal version of the Cobbler cocktail—which is traditionally composed of sherry, sugar and citrus that is shaken, poured over crushed ice and imbibed through a straw. The establishment's current rendition is made with amontillado sherry, high-proof rye whiskey (like Rittenhouse Rye or Hochstadter’s Vatted Rye), red plum puree and fresh lemon juice; surmounted by crushed ice for a snow-cone effect; and then garnished with mint. 40 N. Santa Cruz Ave., Los Gatos
Barrelhouse
The folks behind Vinyl Room are also responsible for the equally popular Barrelhouse, where the cocktail menu currently includes a Mezcal Negroni; the substitution of the usual gin with the agave-based spirit gives it a smoky quality. The mezcal—combined with Campari and Carpano Antica vermouth for the aperitif—is aged four to six weeks in a barrel. The watering hole offers a barrel-aged Manhattan and Sazerac as well, along with seasonal craft cocktails. 305 California Drive, Burlingame
Jack Rose Libation House
The food and patio (live music! dogs welcome!) are great, but the craft cocktails are the real draw here. Classics include the Jack Rose (Laird’s apple brandy, lemon, grenadine) and This Side of Paradise (house bourbon blend, blackberry, lemon, West Indies falernum, fernet branca, root beer). The seasonal Jackelope (Nolet’s gin, cantaloupe, lemon, agave) was such a hit last year, it’s on the menu again this summer. (Psst…an on-site restaurant, Bramble & Bier, is coming soon.) 18840 Saratoga Los Gatos Road, Los Gatos
